Every day from now til I leave on my trip, I will cook our meal in the evening and one extra serving will be put on an an enamel plate and when cold put in the freezer. I will be cooking mini caseroles and pies too, about twenty servings total. That is almost one meal a day prepared for my husband during the time I am away. The remaining days he will cook a piece of fish and vegetables himself.
I have also started to bake loads of cakes. These to will be put in the freezer for his daytime snacks.
Today - 2 doz cherry small cakes, 2 doz fruit small cakes and 1 doz ginger preserve small cakes. Have also baked a chocolate and walnut sandwich, ready for the filling.
One, a fruit cake went disasterously wrong! I thought I had a brilliant idea to bake the cake in a greased casserole dish where I could tip it out on the rack, wait til it cooled and wrap to put straight into the freezer. But I think I tipped it out too quick and all I was left with was big pieces of cake on the rack.
The cake rack was sitting on a clean teatowel, so I picked up the big pieces and put back into the dish and put aside. Then picked up the cake rack and put that aside and thought I would roll up the teatowel of cake crumbs and put these to one side to have with a nice cup of coffee.
Not meant to happen!!! I was busy clearing down the work tops and about to wipe a few things up, when I grabbed the tea towel and "sprayed" cake crumbs all over the floor!!!
So in the end I never had those crumbs to eat, nor did I sit down for a cup of coffee.
